These have been my project for the last few months.
Starting from my Reimagined Classic Enterprise later converted from it to the Phase II design and then I worked on converting my Miranda Class and now I have started a Phase II Excelsior Class.
With that, I have all the names of the Classic Enterprise and the Phase II designs
I love the PhII stuff, but I do have one minor nit-pic:
The PhII Excalibur NCC-1664 should not have that NCC number. NCC-1664 should be a retired number. This is why in TNG, the Ambassador Class Excalibur had a new number.
Maybe go with what I have seen in Fan Films for it, and seen referenced elsewhere - NCC-1705.
I also love how the Ent-A is a new design rather than another Connie with the number slapped on it.

The registry of the Excalibur was not confirmed until it was seen on the CGI model in the 2008 remastered version of "The Ultimate Computer". The registry was first connected with the starship in Greg Jein's influential "The Case of Jonathan Doe Starship" article, published in the April 1973 issue 27 of the T-Negative fanzine. In the article, Jein had made an attempt to "logically" couple the registry numbers as seen in "Court Martial" with the names listed in the reference book The Making of Star Trek. His conjectural ship's registry has been subsequently propagated in the Star Trek Concordance and the Star Trek Encyclopedia, the latter co-authored by future remastering project Visual Effects Producer Michael Okuda, who made use of the remastering opportunity to elevate Jein's until then conjectural ship's registry to canon. With the high-definition version of "Court Martial", the registry, which had been read as NCC-1664, was determined to be NCC-1864. This registry was that of the USS Reliant.
While I admire Greg Jein's attempt, I'm not fond of the Constitution Class reg numbers below 1700.

EMDEN NCC-1856 in canon I would have it as 1715 replaces the USS Merrimac It was classified as a cruiser. the Merrimac was mentioned in comm chatter intercepted by the Epsilon IX station. (Star Trek: The Motion Picture) as it is not a Constitution class I removed it from my original list, the USS Emden is on a chart in ST The Undiscovered Country, Operation Retrieve scene.. in most areas, this was cut from the final film but I remember seeing it.

For those others with numbers under 1700 besides the Excalibur (and ....Constellation? Commodore Decker's ship, right? NCC-1017 was shown on screen), when/where was it determined they were Constitution Class ships?

After the first season had concluded its run, it dawned upon Original Series producers Robert H. Justman and D.C. Fontana that a need had arisen to keep track of the already mentioned Constitution-class starships for future production reference. After some corresponding with suggestions to and fro, a definitive name list of vessels belonging to the, then still called Starship-class, was agreed upon by the producers (dutifully carried over to the decal sheet of AMT's 1968 re-issue USS Enterprise model kit) at the start of the series' second season, and comprised the following vessels (The Making of Star Trek, pp. 163-165),

Greg Jein's "The Case of Jonathan Doe Starship" article used the chart in Commodore Stone's office in Court Martial as his inspiration but also scripts
He mentions the U.S.S. Valiant from the episode "A Taste of Armageddon" It is mentioned in the episode that the Valiant was destroyed 50 years before the Enterprise's contact with Eminiar VII, the problem with that is the Constitution class was first built around 10 years after this,?
Others did the calculation but the Valiant would have been destroyed in 2217 the Enterprise was launched in 2245. I guess the Constitution a short time before.
There were only 11 ships mentioned or seen on screen in the original version of the TOS as far as I know

So my personal take, after seeing that info, would be that those with numbers prior to 1700 would be legacy numbers, meaning there were ships prior to them that carried that NCC #, but weren't Connies.
As an example - A Daedalus Class vessel named USS Excalibur, NCC-1664 went OUT of service, then a new vessel, the Connie version of USS Excalibur NCC-1664, came INTO service. They just didn't add any bloody A, B, C or D back then

One is clearly the Excelsior class, one is clearly the Connie class, BUT...
The other one is SMALLER than the Connie class, which is telling me it is a different, unidentified class. So the class of vessel for the Eagle, Emden and Ahwahnee are unknown.

One is clearly the Excelsior class, one is clearly the Connie class, BUT...

I think the silhouette size is meant to show relative position suggesting 3d in a 2d plane, at least that was my thinking at the time .. but I think given who was in charge and the creator of the charts is Michael Okuda, I guess wanted in this last of the original cast films to try to define the other Constitution Class ships. I think the Eagle is a Constitution CLass but thats just my view on it. however, I do dislike its low reg.
Okuda's Star Trek Encyclopedia, 4th ed., vol. 2, p. 328 listed the ship as what later became known as a Constitution II-class vessel. Its unusual low registry though, suggested that Eagle started out live as an original configuration Constitution-class vessel and was like original class sister USS Enterprise refitted afterwards.
